With this vintage being quite a bit different from years past, we thought it would be good to look at a protocol for transporting your grapes or juice. If you’ve decided to source some fruit from elsewhere in BC or abroad, this is for you.
Zymaflore Egide is a blend of Torulaspora delbrueckii(Td) and Metschnikowia pulcherrima(Mp) for harvest Bio-protection of grapes and juices.
Laffort Zymaflore Egide – 500g
Non-Saccharomyces (Torulaspora delbrueckii and Metschnikowia pulcherrima) in harvest bioprotection, grapes and juices, as an SO2 reduction strategy.
Buy OnlineBy using Zymaflore Egide you can reduce the risk of indigenous fermentation as the Td/Mp yeast will colonise the medium and control the microflora pre-fermentation. Studies have shown this will also help with the reduction of acetic acid bacteria build up while in transit as Td/Mp are more effective than S02 alone.
Work with your grower to add Zymaflore Egide directly onto your grapes or into your juice.
- Without rehydration, sprinkle Zymaflore Egide directly onto grapes or must, 2-5g/hl.
- Keep the temperature low to not start alcoholic fermentation. Shipping in a refrigerated truck is ideal.
- When the shipment arrives to your crush pad process as usual using your preferred enzymes, fining agents and yeasts.
By using this strategy, you will be able to preserve the quality of the fruit to make the best wine possible.
