It is recommended that the must is thoroughly de-pec¬tinized before beginning floatation process. Enzymes such as Endozym Micro or Endozym ICS 10 Éclair both work well for this function.
For optimum results, it is also recommended to use a specific gelatin, like AEB GELSOL, that facilitates the formation of larger sized flocculate thus eliminating the highest percentage of solids from the must.
