Cremor Stop 40 Metatartaric acid
Cremor Stop Extra 40 is a very pure metatartaric acid with a very high esterification index.
It has the highest effectiveness in preventing the formation of potassium bitartrate and calcium tartrate crystals and, in general, of all tartaric salts, at any environmental condition. This ability is prolonged in time for longer periods than with similar products, as its esterification index always above 40° makes hydrolysis very slow even at temperature and acidity conditions aiming at reducing its anti-crystallizing properties.
The exclusive physical and chemical properties, characteristic of the precision and peculiarity of Cremor Stop Extra 40 preparation, make this product the most suitable choice to intervene in the stabilization of white wines and of wines that, in general, should not stay in the bottle for a long time.
The stable percentage of esterified functions, together with the optimal content of active emipolylactide and the most effective condensation degree, make this specific agent safe and extremely effective.
Cremor Stop Extra 40 substitutes or assists wine refrigeration; all the effected trials showed that through the action of this agent any form of residual instability is eliminated.
It is recommended to add Cremor Stop Extra 40 always after the addition of organic and inorganic clarifiers, disacidifying products, decolorizing or deodorizing carbons, potassium ferrocyanide. A filtration carried out 12-24 hours after the addition of Cremor Stop Extra 40 eliminates the possible occurring of opalescence, caused by the high esterification index and by the presence of proteic substances in the wine.
